It's all about the bavette steak at the moment. I had previously heard how it was a specialist French cut that was flavoursome but not as tender as other traditional British cuts. I guess that sometimes you just have to work a bit harder to reap the rewards.

I first really only tried bavette a few weeks back when I stayed at the Hotel du Vin in Poole. Even when I ordered it, the head waiter went to a great effort to discuss it, to explain that it was a different cut that might be a bit tougher. He was French and he sounded very apologetic and asked if I have had it before. I said it was fine and I was willing to accept it and that I like trying new things.

When it came, it was tasty but yes it was a bit tougher and I had to chew more. I now know that they cooked it too long, maybe to offset my expectations if it came to rare to medium rare, as it should have been.

A few weeks later I started seeing that Waitrose are selling bavette. Two good sized pieces at a great price, around £4.50.

I duly left them to get to room temperature, a bit of pepper and oil over and them into a searing griddle pan. Mostly left alone apart from a bit of pressing down to get better charred lines. Must not overcook, must not overcook....

I had to remind myself to be a bit braver than normal and not even try to cook it medium. Pressing down with tongs into the middle of the steak, the feeling was like pressing your face cheek, which meant rare. I knew if nothing else, then at least the end bits would be nicely scorched and medium.

Out the pan and onto a plate, covered loosely with foil, to rest for a while (essential), whilst I sorted our the onions and mushrooms.

So, what was it like. It was on the lower end of medium rare and it was fantastic. Great taste and not really that tough in relative terms. I'd probably put it between a sirloin and a rump steak done medium.

I've had it twice and the second time I had both pieces to myself. I will definitely go back for more.

But, now that it was featured on Simply Nigella, I hope the price doesn't skyrocket! That would be annoying.
